Hey foodies! Now that I can't just head to mom's for thanksgiving, (I'm too far away) I find myself having to cook thanksgiving dinner myself, and to make matters worse, I'm pescatarian (like a vegetarian, but I occasionally eat fish as well, preferably as sushi). So I'm in search of some awesome veggie friendly thanksgiving dishes to cook up and share with some non-American friends, and I thought I bet I'm not the only one in my position, so I thought I'd turn it into a post. I'm looking for your favorite veggie thanksgiving recipes for a round up style post, where I'll credit and link back to your blog and recipe. Even if it's just a recommendation, I'll link back to you! It'll look something like this: Claire at World Traveler in Training suggests this vegetarian stuffing recipe by Vegweb.com and this Sweet Potato and Lime Soup by CookVeg.co.uk So if your interested in participating, leave a link below! And thanks for sharing!

Hey, Claire! Do you use eggs for cooking or eat them? Maybe you can do a macaroni and cheese? I have a crockpot mac-n-cheese recipe I love if you want it. Let me know!

I love this thread. I've been a veggie for over 5 years and my parents still don't get it. This is how a typical conversation with my mother goes: Me: Mom I'm hungry can you have some food when I come over? MOM: Sure honey, how about we order Chinese food. Me: Oh yeah that will be great. Can you order me some rice? MOM: Yes I will order chicken fried rice. No problem. Me: Mom, veggie fried rice. No chicken I'm vegetarian remember? MOM: You don't eat chicken? Me: No mom I don't eat meat. MOM: But it's not meat, it's chicken.

mybodyzen, Oh man, I might have to make that Carrot Apple Ginger soup this week and forget waiting for Thanksgiving. tahnyakristina I hate that! I'm in Germany, and my veggie friends have lots of stories of ordering salads without chicken only to have the chef add bacon instead. People here who identify as vegetarian sometimes eat fish, so it gets even more confusing.

If you sub veggie broth for the chicken broth, this Apple and Mushroom Wild Rice stuffing would be a great vegetarian option. www.curiouscuisiniere.com/apple-mushroom-wild-rice-stuffing/Our Roasted Brussels Sprouts with Blue Cheese and Cranberries (www.curiouscuisiniere.com/roasted-brussels-sprouts-with-blue-cheese/) and Layered Sweet Potato and Apple Bake(http://www.curiouscuisiniere.com/layered-sweet-potato-apple-bake/) are great vegetable dishes as well!
